KK's Blueberry Apple Cinnamon Muffins

People... people! I know this website is usually all about the music, but I recently tried making these blueberry-apple-cinnamon muffins and I LOVE them. So I thought I'd share the recipe. Muffins are gluten-free, dairy-free, low sugar and they actually taste really good! Recipe below ??

Ingredients (makes 12 muffins):

5 eggs

1 cup unsweetened applesauce

1/2 cup coconut flour

2 tablespoons cinnamon

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 cup apples

1/2 cup blueberries

Coconut oil (regular butter is also an option) for greasing the muffin tins

 

Instructions:

1. Preheat the oven to 400 degrees, grease muffin tins lightly with coconut oil (or butter if you prefer).

2. Whisk all the ingredients together in a large bowl, then let them settle for 5 minutes. Place 1/4 cup of batter in each muffin tin.

3. Bake until brown (11-15 mins) they should not be soft when lightly touched on top. Let them cool.

*can be frozen or refrigerated for breakfast/busy mornings
